  • 1 liter of milk
  • 80 g of sugar
  • 1 cinnamon stick or 1 vanilla pod
  • Peel of a lemon

  1. Infuse the milk: Heat the milk in a saucepan with the cinnamon stick (or vanilla bean) and lemon peel. This step is key to giving it that characteristic aroma. The pan should be large enough to hold the milk, vanilla or lemon, and later the rice, which you should stir.
  2. Add the rice: When the milk begins to boil, add the rice and reduce the heat to a simmer for a gentle, controlled boil.
  3. Slowly cook, stirring: Let it cook for about 30-35 minutes over low heat, stirring often so the rice doesn't stick and releases the starch, which will give it a creamy texture.
  4. Add the sugar: Add the sugar during the last 5 minutes of cooking. Continue stirring until the mixture has a smooth, creamy consistency.
  5. Let it rest: Remove the cinnamon stick (or vanilla bean) and lemon peel. Let it rest for a few minutes to thicken further.
